Papas chorreadas are an easy and delicious way to transform your regular side of potatoes. These potatoes are covered in a creamy and salty cheesy sauce to make a super cozy dish. This recipe contains few ingredients and is easy to make!

What are Papas Chorreadas?
Papas chorreadas are a traditional Colombian side dish. It is commonly eaten in the colder Andean region of Colombia.
The plate contains red potatoes covered abundantly in an addictive sauce. The base of this sauce is an hogao (also called guiso) which is a condiment containing tomato, garlic, and green onions (scallions). To the base, you add cream and shredded cheese, which then is called a chorreado or chorriado.
The most popular use of this condiment is with potatoes. You could however add the sauce to other dishes, for example to cooked vegetables.

All ingredients except the cheese are easy to find outside of Colombia. In this recipe, I use queso Paipa. This is a mature and flavorful cheese from the department Boyaca in the Andean region. But you can replace it with any cheese that is available to you, such as cheddar or mozzarella.
In Colombia a red potato called papa pastusa is frequently used. Outside of Colombia you can replace it with any type of red potato.Â
Instructions
1. Cook potatoes until soft. 2. In the meantime, prepare hogao by cooking onion and garlic until soft. Add tomatoes and cumin and let simmer for 20 minutes (picture 3). 4. Add cream and shredded cheese. 5. Stir into a creamy and cheesy sauce. Taste and adjust seasoning. 6. Drain potatoes, saving some of the cooking liquid to add to the sauce. Add potatoes to the creamy tomato sauce and mix well.Â

Colombian Papas Chorreadas (Potatoes in Tomato-Cheese Sauce)
Ingredients
- 700 gram red potatoes (papa pastusa in Colombia)
- 2 tablespoons sunflower oil
- 4 grated tomatoes
- 2 big green onions (scallions), chopped finely
- 1 clove of garlic, chopped finely
- 1 teaspoon cumin powder
- 50 gram shredded cheese (queso Paipa if available), about 1 big handful (replace by other cheese of choice such as mozarella or cheddar)
- 100 gram cream (about 1/2 cup)
- salt and pepper
Instructions
- Cook potatoesPeel the potatoes partially, so that every potato has some skin left on them. Halve potatoes, wash them and cook in boiling water until soft (20-30 minutes). Drain, reserving 1/2 to 1 cup of the cooking liquid. Cover potatoes with a lid to keep warm
- While the potatoes cook, make the sauce (chorreado) Cook onion and garlic in 2 tablespoons of oil until soft (5 mins). Add cumin and grated tomatoes and let simmer for 15-20 mins. Add the cream, grated cheese, pepper, and salt. Stir so you get an even sauce and the cheese melts. Take 1/2-1 cup of the cooking liquid of the potatoes and add to the sauce to get a thinner consistency.Taste and adjust seasoning
- Mix in the warm potatoes with the sauceServe while warm
