COLOMBIAN FOOD

Colombia is one of the most biodiverse countries in the world. It has coastlines along the Pacific Ocean and the Caribbean, encompasses a part of the Amazon rainforest, has deserts, grasslands, highlands of the Andes Mountains, and metropole cities. Besides that, it is a multicultural and multi-ethnical country. The diversity of people and nature has led Colombia to develop a varied and interesting food culture, with different dishes and varieties of dishes all over the country. Colombian food is not an international cuisine, nor one that you see often in restaurants around the world. It is based on home cooking, and recipes are passed on within the family. Cooked with local products. Famous dishes are for exmple bandeja paisasancochoajiacoarroz con polloarepas and patacones. Most of these dishes have one thing in common: they are heavy on animal protein.

VEGETARIAN COLOMBIAN FOOD

My experience with Colombian cuisine started a couple of years ago. I met my boyfriend, a Colombian, and started traveling to Colombia. In love with the country (and my boyfriend), I decided to move to the capital Bogotá. Although I love to cook and learn all about new cuisines, I quickly found out that it is not easy finding tasty, vegetarian Colombian dishes. To me, this seemed a missed chance. So many components of plates are naturally vegetarian and delicious, and so many dishes can be made vegetarian. Colombian food is too good to only be eaten by carnivores. So there it started. My mission, my interest: making Colombian food – with local ingredients – but vegetarian friendly. Vecina Vegetariana is a resource for everybody who is interested in cooking Colombian dishes.
