These week has been an arepa-kind-of-week for me. I posted a traditional recipe for Arepas Colombianas (Colombian Corn Cakes). After that a recipe for a simple arepa rellena, to be specific an Arepa de Queso Colombiana (Cheese-Stuffed Corn Cakes). Where the first one is a good basic recipe, the second one transforms the arepa in a satisfying snack. But this recipe for Arepas Rellenas will show you how you can turn the humble arepa in a complete lunch or dinner.

Arepas

Arepas are round and fairly flat corn cakes, and you eat them for breakfast, as a side to the main dish, or as a snack. Yes, that’s right: arepas that you can eat all day every day. And that is not a punishment, I can assure you. Crispy on the outside and soft on the inside, they are always a treat. And surely they are the most Colombian food there is.

Arepas Rellenas

Arepas rellenas are stuffed corn cakes. You make them by slicing the arepa open to create a pocket, just as with pitabread. You put the fillings in and eat it as a sandwich. Easy as that. Very common ways to stuff the arepa are with chicken or beef, and some vegetables or avocado. For a vegetarian version many options are possible. You can add vegetables like tomato and avocado (although they technically are fruits…), some kind of sauce like hogao (tomato onion sauce) or ají (hot sauce), and top off with cheese. In this recipe I use some ingredients that I almost always have in the house: the Colombian tomato-onion sauce hogao, avocado, and some grated cheese.

Depending on the size of your arepas, they are a smaller-sized lunch or dinner. But compared with a nice salad they make a complete meal. Or indulge and eat two!

Ingredients
  

  • 1 recipe for Arepas Colombianas, see link in text above
  • 1 recipe for hogao (tomato onion sauce), see link in text above
  • 1 ripe avocado, sliced
  • some grated cheese (mozarella)

Instructions
 

  • Prepare arepas according to instructions (see link for recipe in text)
  • Cut the arepas open with a sharp knife, creating a pocket
  • Spread some hogao on the inside of the arepa. Add slices of avocado and top with grated cheese
  • Serve while fresh and warm

Notes

Arepas are best eaten the same day. Once stuffed they should be eaten as soon as possible.
