Ceviche is a dish made of lime-marinated raw fish or seafood. The citrus juice cures the fish protein, giving it an effect similar to cooking. It comes originally from Peru, but over the years it has gained popularity in the whole of Latin America and other parts of the world.

Vegan Hearts of Palm Ceviche

Vegan versions of ceviche contain one or more vegetables, marinated in lime juice. Often it also comes with tomato, onion and cilantro. For this ceviche I use a tropical and in Colombia widely available vegetable: hearts of palm. Hearts of palm are harvested from the inner core of certain palm trees. You buy them either canned or in a glass jar. They look like the white thick stem of an asparagus. They are soft and their flavor is often compared to artichokes. To make this ceviche you will only need: hearts of palm, tomato, green onion, cilantro and lime juice.

Green Plantain Chips

Green plantains are a staple in Colombia. You use them for example to make the world-famous patacones (Fried Green Plantains). To make Green Plantain Chips you only need a green plantain, oil for frying and salt. Firstly, you thinly slice the plantain and secondly you fry the slices until golden. Salt them and they are ready to eat! They are delicious on its own, or you can serve them with Colombian suero (sour cream). They taste heavenly with the hearts of palm ceviche as they provide a necessary crunch to the dish. Use the chips to scoop up the ceviche.

Ingredients
  

Hearts of palm ceviche

  • 1 can/jar hearts of palm (220 g drained weight)
  • 1 tomato, diced finely
  • 1 green onion, chopped finely
  • 1 handful of cilantro, chopped finely
  • juice of 1 lime
  • salt and pepper

Green Plantain Chips

  • 1 green plantain
  • vegetable oil, for frying
  • salt

Instructions
 

Hearts of Palm Ceviche

  • Drain the hearts of palm. Halve them lengthwise and slice them finely. Add to a mixing bowl
  • Add the other ingredients (tomato, green onion, cilantro, lime juice, salt and pepper) and mix well. Place in individual bowls when eating as a starter, or place in a larger serving bowl when sharing. Set aside while preparing the plantain chips

Green Plantain Chips

  • Peel the green plantains. Using a peeler, make thin slices of plantain. You can either do it lengthwise (as in pictures), or make round, coin-like chips
  • Heat up a shallow layer of oil in a frying pan with a thick base. Fry the slices of platano in batches, for 1-2 minutes per side, or until golden
  • Take out and place on paper towels to drain excess oil. Salt. Serve with the hearts of palm ceviche
