This Colombian drink made of panela (unrefined cane sugar) and limes is the most refreshing beverage you can drink on a hot day! Recently I posted a recipe for a warm drink with panela (Aguapanela, Hot Colombian Sugarcane Drink), perfect for cold nights. But this recipe is all about a sweet and sour ice-cold homemade limeade.

Panela
But first again some explanation about what panela is. It is a type of unrefined cane sugar. Sugarcane juice is boiled and evaporated. This leads to a residue which is the panela. Because it is unrefined it is said that panela contains vitamins and minerals that in refined sugar are filtered out. It is, however, still a type of sugar. Therefore it contains similar amounts of calories. Panela has a sweet and caramel-like flavor due to molasses. You can buy it in different forms, for example in blocks or grated.
In other Latin American countries, it goes by different names. For example: rapadura, piloncillo, papelón and many others. In Colombia people use panela as a sweetener, and for warm or cold aguapanela (limonada de panela).

Limonada de Panela / Aguapanela
Limonada de Panela also goes by the names aguapanela and limonada de aguapanela. It is effortless to make and you only need 3 ingredients.
- Water
- Panela
- Lime juice
First, you boil water with panela for 20 minutes. Secondly, you let it cool off, and then you add lime juice. Serve it with ice, to make the drink extra cold.
A variation is to add fresh herbs like mint to the limeade.

Limonada de Panela (Colombian Sugarcane Limeade)
Ingredients
- 2 l water
- 200 g panela (in blocks or grated)
- juice of 2 limes (or more, to taste)
- ice cubes/crushed ice
Instructions
- Bring 2 liters of water to a boil in a pot. Add panela. Bring to a boil again, cover with a lid and turn low. Let simmer for 20 minutes. Stir occasionally, check if all panela has dissolved
- Pour aguapanela in a jug that fits your refrigerator. Let cool until room temperature outside of the refrigerator and afterwards place inside to let cool completely (2 h or more)
- Add lime juice and stir. Serve in big glasses filled with ice cubes
