Colombian Mazamorra Recipe

Colombian mazamorra is a drink made of milk and corn (hominy) sweetened by panela (unrefined cane sugar). It is a popular drink, traditionally from the Antioquia region in Colombia. With this recipe you can make your own homemade version. Because of the use of soy milk it is suitable for a vegan diet.

What is Colombian Mazamorra?

Mazamorra is a drink consisting of a specific type of corn grains called hominy, in milk, and sweetened by panela (unrefined cane sugar). It is a drink that originally comes from the Antioquia region in Colombia. That region is also known as the “paisa” region and because of that this drink is often called mazamorra paisa. It is still very common to have this drink served during lunch, or as a snack in the late afternoon. Because there are whole kernels of corn in the drink, the texture is not completely smooth and liquid, giving it a more hearty feel to it.

Ingredients

This recipe only contains three ingredients: hominy, soy milk and panela.

Hominy

Hominy is a type of corn, in this case white field corn, that has been processed in a way that the harder outside shell comes off and you are only left with the softer part. In Colombia it is called maíz peto or maíz trillado. In this recipe I use dried hominy, but outside of Colombia you can buy canned hominy. Soy milk

The original version requires cow’s milk. For this vegan version I use unsweetened soy milk. You can use any type of milk you like, coming from an animal- or vegetable source. Just make sure the milk is nice and cold.

Panela

Panela is a type of unrefined cane sugar. Panela has a sweet and caramel-like flavor due to molasses. It comes in the shape of a block or already grated. If panela is not available to you, you can use brown cane sugar.

Colombian Mazamorra

Equipment

  • 1 medium-sized pot to cook the hominy

Ingredients
  

  • 200 grams hominy, soaked in water for 12 hours (or use canned hominy and skip the soaking)
  • 1,3 liter unsweetened soy milk
  • grated panela, to taste (replace by brown cane sugar)

Instructions
 

  • Place the soaked hominy in a boiling pot with plenty of water. Bring to a boil, turn low and let simmer until cooked (1,5 – 2 hours when using dried-and-soaked hominy). Stir occasionally to prevent the hominy from sticking to the pot. Drain and let cool off
  • Add 1/5 of the hominy to a cup and add about 250 ml of cold milk. Repeat for the other mazamorras
  • Serve with grated panela
