Banoffee Pie with Colombian Arequipe
The original banoffee pie has a crust made of biscuits, and a filling consisting of a thick caramel sauce, bananas and cream. The name banoffee pie comes from the words “banana” and “toffee”. At the caramel sauce, that is were Colombia comes in. The sauce usually is made with boiled condensed milk, also called arequipe in Colombia, or dulce de leche in other Latin American countries. For this recipe of Banoffee Pie with Colombian Arequipe I use a base made of Colombian chocolate chip cookies. Here you can buy ready-to-use arequipe everywhere, but I will also give some tips how to make your own. The arequipe is topped with bananas (also very Colombian), cream, and some chocolate chips.

Arequipe or Dulce de Leche
Arequipe and dulce de leche are the same thing, the name just differs between countries. It is a thick, caramel-type of sauce. You make it by boiling condensed milk in a closed can for 3 hours. Luckily in Colombia, you can buy arequipe everywhere. They even sell tiny plastic containers with the thing in it and an even tinier spoon to scoop it out just as it is. If you can’t buy it, you can easily make it yourself.
How to prepare arequipe
- Buy a can of condensed milk. Take off the stickers and the glue. Put the can in water, make sure there is always a layer of a couple of centimers covering the can.
- Softly simmer for about 3 hours, depending on how dark you want the arequipe to be.
- Let it cool for several hours before even thinking of opening it. When completely room temperature, carefully open the can and enjoy the arequipe! You can keep the leftovers in a container in the fridge for a couple of days.
- Apparently it could be dangerous boiling a can like this. Nothing happened when I did it, but be careful. Make sure the can is always covered in several centimeters of water and let simmer really softly.

Banoffee Pie with Colombian Arequipe
Equipment
- 20 cm cake tin with loose bottom
Ingredients
- 300 g chocolate chip cookies
- 100 g unsalted butter, plus extra for greasing tin
- 200 ml heavy cream
- 2 tbsp white sugar
- 240 g arequipe/ dulce de leche (about 4 big tbsp) store bought. see text in post how to make it yourself
- 1 tbsp water (if necessary)
- 2 ripe bananas, sliced
- chocolate chips, for decoration
Instructions
- Grease tin with butter, set aside
- Make the base of the pie.Crush cookies using a food processor. Melt the butter. Mix butter and cookies together and then press into the tin to make a crust (bottom and sides). You will have enough mixture to make a thick base on the bottom and the sides. Put in the refrigerator for at least 3 hours, or overnight
- Whip cream together with the sugar, set aside in the refrigerator until using
- Warm arequipe in a pot only for a couple of seconds until the arequipe is easier to spread, add 1 tablespoon of water if necessary.When using homemade arequipe, warming and adding water will most likely not be necessary as it is more liquid
- Spread arequipe on the pie base. Add sliced bananas. Place whipped cream on top. Sprinkle with chocolate chips or other topping of choice. Serve right away or keep in the refrigerator until ready to eat
