Green Mango Popsicles (Paletas de Mango Biche)

These popsicles are made of green (unripe) mango, lime juice and some sugar, topped with salt. How weird it might sound, they are delicious. Tangy, salty and are the most refreshing snack you can find. They are the frozen version of the Colombian fruity treat mango biche (green mango with lime juice and salt).

  • popsicle molds (4-6 depending on size)

Ingredients
  

Green Mango Popsicles

  • 1 big green mango (unripe mango) (about 600 g)
  • juice of 1/2 lime
  • 1 tbsp white sugar
  • 6 tbsp water

To serve

  • salt, to taste

Instructions
 

  • Peel mango and cut the flesh in small pieces
  • Take half of the mango and place in a blender/mixer. Add lime juice, sugar and water and blitz until smooth. Add more water if the mixture stays solid
  • Add the small pieces of mango to the liquid mango mixture and mix well
  • Fill the popsicle molds, make sure that you fill them all the way so there will be no air pockets.
    Place them in the freezer for 4 hours until completely frozen
  • When ready to eat, take them out their molds (place in a cup of water for a couple of seconds if the popsicle doesn't come out)
    Sprinkle a little bit of salt on the popsicles and enjoy!
