Banoffee Pie with Colombian Arequipe

Banoffee Pie with Colombian Arequipe is an easy and delicious no-bake treat, made with arequipe (dulce de leche), banana and whipped cream.

Equipment

  • 20 cm cake tin with loose bottom

Ingredients
  

  • 300 g chocolate chip cookies
  • 100 g unsalted butter, plus extra for greasing tin
  • 200 ml heavy cream
  • 2 tbsp white sugar
  • 240 g arequipe/ dulce de leche (about 4 big tbsp) store bought. see text in post how to make it yourself
  • 1 tbsp water (if necessary)
  • 2 ripe bananas, sliced
  • chocolate chips, for decoration

Instructions
 

  • Grease tin with butter, set aside
  • Make the base of the pie.
    Crush cookies using a food processor. Melt the butter. Mix butter and cookies together and then press into the tin to make a crust (bottom and sides). You will have enough mixture to make a thick base on the bottom and the sides. Put in the refrigerator for at least 3 hours, or overnight
  • Whip cream together with the sugar, set aside in the refrigerator until using
  • Warm arequipe in a pot only for a couple of seconds until the arequipe is easier to spread, add 1 tablespoon of water if necessary.
    When using homemade arequipe, warming and adding water will most likely not be necessary as it is more liquid
  • Spread arequipe on the pie base. Add sliced bananas. Place whipped cream on top. Sprinkle with chocolate chips or other topping of choice.
    Serve right away or keep in the refrigerator until ready to eat
