Vegan Hearts of Palm Ceviche with Green Plantain Chips
This vegan ceviche with green plantain chips requires only 6 ingredients. It is vegan and gluten-free. In a matter of minutes you can serve this tropical and light starter or snack.
Servings 2portions if you serve it as a starter. As a snack you can share this with 4-6 people.
Ingredients
Hearts of palm ceviche
1can/jarhearts of palm (220 g drained weight)
1tomato, diced finely
1green onion, chopped finely
1handfulof cilantro, chopped finely
juice of 1 lime
salt and pepper
Green Plantain Chips
1green plantain
vegetable oil, for frying
salt
Instructions
Hearts of Palm Ceviche
Drain the hearts of palm. Halve them lengthwise and slice them finely. Add to a mixing bowl
Add the other ingredients (tomato, green onion, cilantro, lime juice, salt and pepper) and mix well. Place in individual bowls when eating as a starter, or place in a larger serving bowl when sharing. Set aside while preparing the plantain chips
Green Plantain Chips
Peel the green plantains. Using a peeler, make thin slices of plantain. You can either do it lengthwise (as in pictures), or make round, coin-like chips
Heat up a shallow layer of oil in a frying pan with a thick base. Fry the slices of platano in batches, for 1-2 minutes per side, or until golden
Take out and place on paper towels to drain excess oil. Salt. Serve with the hearts of palm ceviche
