Vegan Hearts of Palm Ceviche with Green Plantain Chips

This vegan ceviche with green plantain chips requires only 6 ingredients. It is vegan and gluten-free. In a matter of minutes you can serve this tropical and light starter or snack.

Ingredients
  

Hearts of palm ceviche

  • 1 can/jar hearts of palm (220 g drained weight)
  • 1 tomato, diced finely
  • 1 green onion, chopped finely
  • 1 handful of cilantro, chopped finely
  • juice of 1 lime
  • salt and pepper

Green Plantain Chips

  • 1 green plantain
  • vegetable oil, for frying
  • salt

Instructions
 

Hearts of Palm Ceviche

  • Drain the hearts of palm. Halve them lengthwise and slice them finely. Add to a mixing bowl
  • Add the other ingredients (tomato, green onion, cilantro, lime juice, salt and pepper) and mix well. Place in individual bowls when eating as a starter, or place in a larger serving bowl when sharing. Set aside while preparing the plantain chips

Green Plantain Chips

  • Peel the green plantains. Using a peeler, make thin slices of plantain. You can either do it lengthwise (as in pictures), or make round, coin-like chips
  • Heat up a shallow layer of oil in a frying pan with a thick base. Fry the slices of platano in batches, for 1-2 minutes per side, or until golden
  • Take out and place on paper towels to drain excess oil. Salt. Serve with the hearts of palm ceviche
